First things, you wanna open Epic and you wanna press install on the game you wanna reinstall.
Make sure your backup is on the same drive/folder as your currently installing game.
After which you pause the download and kill off Epic with task manager/exit.
Delete the folder that you started installing and replace the name with your backed up game.
Reopen Epic and you will see the install was quit, press the install button on the same game (for the method to work, Epic will need to automatically know that you are gonna "install" the game in your default install location, like C: or D:, etc. so if your game is on C:/Games, when relaunching epic and pressing install button, it should automatically be C:/Games)
Now it's going to start verifying game files and you're done!
If any updates have happened since the backup, they will cause no problem and install smoothly.
